Ingredients


Makes: 4 servings
  • 2 C (500 ml) frozen corn kernels
  • 2 C (500 ml) canned black beans, drained and rinsed
  • 2 Tbsp (30 ml) olive oil
  • 2 Tbsp (30 ml) Poco Picante Salsa Mix
  • Lime, optional
  • Cilantro, optional

Preparation


 
  • In a Rectangular Steamer, microwave corn on high, with lid on for 2 minutes.
  • Combine corn with all other ingredients. Add a lively splash of lime juice and cilantro if desired. Serve warm or chilled.
